Rice offers caterers a healthier menu option and bottom line

Mark Lyddy, Tilda’s head of foodservice, said: “Rice is perfect to bulk up salads and caterers should remember that profit margins on rice are greater than on fresh vegetables, so this is
a way they can increase summer profits.”

He added: “The beauty of Basmati rice is that it produces better ‘plate-fill’ due to the slender, long grains – meaning caterers can use less rice for the same plate volume. Consumers also eat fewer calories, which means caterers can earn more profit.”
