Enfield-based wholesaler JJ Food Service is from this month offering Individually Quick Frozen (IQF) cod, haddock (pictured above) and plaice and line-caught cod and haddock in its fish range, including lines from the Atlantic Ocean.
Chief products officer at JJ Ali Guvemli said: “Our partnership with Unique Seafood has enabled us to significantly expand our offer to include these premium products at competitive prices.”
Line-caught fish from JJ’s Froyannes vessel involves towing up to 40,000 baited hooks along 60,000 metres of line at a time. It’s considered a sustainable method as it avoids the by-catch associated with large trawling nets. “The fish are less stressed so you end up with a better quality product. The line-caught skinless and boneless cod is the perfect premium option for chippies”, said Guvemli.
For fish restaurants, JJ recommends IQF skinless and boneless cod fillets. Guvemli says, “Each fillet is frozen separately from all the others, helping to support portion control and reduce food waste.”
JJ’s fish range is available in a range of sizes from 4oz-32oz and is caught, processed and Frozen at Sea which gives caterers consistent access to seasonal fish, all year round. “Freezing can help to retain vitamins and minerals and can be lower cost than fresh varieties,” said Guvemli.
