Brakes has added two new fish products to its Christmas line-up.
The new Tuna carpaccio and a Scotch whisky cured cold smoked salmon portion are perfect for starters and light bites, the wholesaler claims.
The Tuna carpaccio, best served with lemon or vinegar is supplied frozen, 10 x 80g portions to a pack.
“Just add a garnish and serve to capitalise on the growing trend for carpaccio dishes in all day dining,” says a Brakes spokesman. “Carpaccio (or Ceviche) is growing in popularity in the UK out of home eating market (pubs, hotels, restaurants, contract catering etc.) as a result of a North American foodservice market trend and is ideal for operators looking for easy menu ‘solutions’ – simply thaw, garnish and serve.”
The Scotch whisky cured cold smoked salmon portion is a twist on the classic Christmas favourite, smoked salmon. Boneless, to save on prep time, but with the skin still on for that “just caught” appearance when presented on the plate, the 140-170g portion is individually frozen, 10 to a pack, to minimise waste.
“The distinctive flavour of the whisky brings a first-class touch that commands a premium price while offering a point of difference on the menu. Flavoured/cured salmon portions are right on trend in the OOH eating market – other examples include Teriyaki and Sweet/Honey,” says the spokesman.
