In addition to its research into shopper behaviour in retail and cash and carries him! has been carrying out studies in the foodservice sector, chief operating officer Tom Fender told the conference.
In its most recent study more than 1,300 customers across 16 chains and independent operators were interviewed both when they entered premises and when they left.
Fender said the study showed that customers were leaving premises spending less than they expected to when they entered and this, he suggested, meant customers were not particularly price sensitive.
Fender said another finding was that a surprisingly high proportion of customers thought it was important that premises were child friendly. Speed of service was also important with customers spending less and less time when eating out.
